Ingredients

  • lb chicken skinless
  • 14.5 oz chicken broth ready-to-serve canned
  • 4.5 oz chilis green chopped canned
  • teaspoon cumin 
  • cup pinto beans dried
  • tablespoons cilantro leaves fresh chopped
  • cup corn frozen
  • cup salsa 

Equipment

  • slotted spoon
  • slow cooker

Directions

  1. Place beans in medium bowl; add enough water to cover.
  2. Let stand overnight to soak.
  3. Drain beans; discard water.
  4. Place beans and all remaining ingredients except cilantro in 3 1/2 to 4-quart Crock-Pot Slow Cooker; mix well.
  5. Cover; cook on low setting for 10 to 12 hours.
  6. To serve, remove chicken from slow cooker with slotted spoon.
  7. Remove chicken from bones; discard bones.
  8. Cut chicken into pieces; return chicken to slow cooker.
  9. Add cilantro; mix well.
