  • 28 ounce canned tomatoes diced undrained canned
  • tablespoon chili powder 
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic cloves minced
  • cup bell pepper diced green ( 1)
  • tablespoon ground cornmeal finely
  • 0.5 teaspoon ground pepper red
  • cup onion chopped (1 medium)
  • pound chicken breasts boneless skinless cut into 1/2-inch cubes
  • 0.3 cup strong coffee decoction brewed
  • tablespoons water

Directions

  1. Heat a Dutch oven over medium heat. Coat pan with cooking spray.
  2. Add onion, bell pepper, and garlic; cook 5 minutes or until onion is translucent, stirring often.
  3. Add chicken to pan; cook 5 minutes, stirring often.
  4. Add cilantro and next 6 ingredients (through tomatoes), stirring to combine; bring to a boil. Cover, reduce heat, and simmer 10 minutes.
  5. Combine masa harina and 3 tablespoons water in a small bowl.
  6. Add to chicken mixture, stirring well to combine. Simmer, uncovered, 10 minutes.
  7. Garnish with chopped cilantro, if desired.
