  • tablespoon canola oil 
  • 0.8 cup onion chopped
  • 0.5 cup bell pepper red chopped
  • 0.5 cup bell pepper green chopped
  • clove garlic finely chopped
  • 6.3 oz taco seasoning 
  • 2.8 cups chicken broth (from 32-oz carton)
  • cups chicken shredded cooked
  • 30 oz cannellini beans drained canned
  • 0.8 cup pepper jack cheese shredded
  • serving cream sour
  • serving spring onion chopped

Directions

  1. In Dutch oven or 4-quart saucepan, heat oil over medium-high heat. Cook onion, bell peppers and garlic in oil 5 minutes, stirring occasionally, until tender.
  2. Add taco seasoning mix; cook and stir 1 minute.
  3. Stir in broth, chicken and beans.
  4. Heat to boiling; reduce heat. Cover; simmer 20 minutes, stirring occasionally, until thoroughly heated. Top each serving with cheese.
  5. Garnish with sour cream and green onions.
