  • 0.3 teaspoon cayenne pepper 
  • tablespoons chili powder 
  • tablespoons cilantro leaves fresh chopped
  • cloves garlic minced
  • 0.5 teaspoon garlic powder 
  • large bell pepper diced green
  • 2.5 pounds ground beef 
  • tablespoons ground cumin 
  • teaspoon ground pepper black
  • teaspoons kosher salt 
  • large bell pepper diced red
  • 0.5 cup onion diced red
  •  roma tomatoes diced
  • 15 ounce soy black beans drained and rinsed canned
  • tablespoons vegetable oil

Directions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add peppers and onions and cook until slightly tender.
  3. Add the ground beef and spices and cook until browned. Skim off excess grease.
  4. Add the diced tomatoes and soy black beans and simmer for about 10 minutes, stirring occasionally.
  5. To serve, garnish chili with cilantro. If desired, top with shredded Cheddar or Jack cheese, sour cream, and sliced scallion tops.
