Ingredients

  • 20 oz tomatoes and chiles diced green undrained canned
  • 6 large eggs 
  • 0.3 cup cilantro leaves fresh chopped
  • 0.5  bell pepper green chopped
  • 1 pound mild ground pork sausage 
  • 2 cups milk 
  • 12 oz monterrey jack cheese shredded with peppers or monterey jack cheese
  • 1 small onion chopped
  • 0.5 teaspoon pepper 
  • 1 teaspoon salt

Directions

  1. Cook sausage in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink.
  2. Drain and return to skillet.
  3. Add chopped onion and bell pepper to sausage; saut over medium heat 5 minutes or until vegetables are tender. Stir in tomatoes and green chiles; reduce heat. Cover and simmer 10 minutes.
  4. Layer half each of tortilla pieces, sausage mixture, and cheese in a lightly greased 13" x 9" baking dish. Repeat layers.
  5. Whisk together eggs and next 3 ingredients; pour over layers in dish.
  6. Bake, uncovered, at 350 for 25 to 30 minutes or until lightly browned and set in center.
  7. Sprinkle with cilantro before serving.
