Ingredients

  • cup avocado diced
  • 0.7 cup prechopped bell pepper green
  • 0.3 teaspoon pepper black
  • tablespoon bottled garlic minced
  • 14 ounce canned tomatoes diced undrained canned
  • teaspoons chili powder 
  • cups less-sodium chicken broth fat-free
  • tablespoons cilantro leaves fresh chopped
  • teaspoon ground cumin 
  •  jalapeno minced seeded
  • pound pork tenderloin trimmed cut into bite-sized pieces
  • 15 ounce pink beans rinsed drained canned
  • cup prechopped onion 
  • 0.5 teaspoon salt

Directions

  1. Heat a small nonstick Dutch oven over medium-heat. Coat pan with cooking spray.
  2. Add onion, bell pepper, garlic, and jalapeo to pan; saut for 2 minutes.
  3. Add pork; cook 3 minutes.
  4. Add broth and next 6 ingredients (through tomatoes); bring to a boil. Partially cover, reduce heat, and simmer 6 minutes or until pork is done, stirring occasionally.
  5. Remove from heat, and stir in cilantro.
  6. Serve with avocado.
