  • 8.5 inch thick bread french sourdough or country-style (each 5 x 3 inches)
  • tablespoons butter ()
  • tablespoons dijon mustard 
  • large eggs 
  • ounces manchego cheese thinly sliced
  • tablespoons quince preserves (quince paste)
  • ounces serrano ham thinly sliced

  1. Arrange 4 bread slices on work surface.
  2. Spread each with 1/2 tablespoon mustard.Top each with 1/4 of cheese, then 1/4 of ham,folding to fit.
  3. Spread 1 tablespoon quincepaste on each of remaining 4 bread slices;place bread, paste side down, atop ham.
  4. Beat eggs in pie dish until well blended.Melt 2 tablespoons butter in each of 2 largeskillets over medium-low heat. Workingwith 1 sandwich at a time, hold sandwichestightly closed and dip into beaten eggs tocoat on all sides.
