  • medium avocado peeled cut into 10 wedges

  • 0.3 teaspoon pepper red crushed
  • 0.3 cup cilantro leaves fresh chopped
  • cup peas green shelled
  • cups low-salt chicken broth 
  • cup onion chopped
  • cup plum tomatoes chopped
  • cup rice long-grain uncooked
  • 0.3 teaspoon salt 
  • teaspoons vegetable oil

Directions

  1. Heat oil in a saucepan over medium heat.
  2. Add rice and onion; saut 3 minutes.
  3. Add peas, tomato, broth, chili powder, salt, and pepper; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Spoon onto plates.
  4. Sprinkle with cilantro; serve with avocado.
