  • 0.5 cup celery chopped
  •  garlic cloves minced
  • cup bell pepper green chopped
  • tablespoon olive oil 
  • cup onion chopped
  • cups plum tomatoes chopped ( 7 tomatoes)
  • cup rice medium-grain uncooked
  • 0.5 teaspoon salt 
  • pound shrimp deveined peeled
  • cups water

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add onion and garlic; saut 4 minutes.
  3. Add tomato, pepper, and celery; saut 6 minutes.
  4. Stir in water, rice, and salt, and bring to a boil. Cover, reduce heat, and simmer for 15 minutes.
  5. Add shrimp; cook 4 minutes or until shrimp are done.
