Ingredients

  • ounces chorizo sausage spanish cut into 1/4-inch-thick slices
  • ounce bottled clam juice 
  • 0.5 cup cooking wine dry white
  • cup less-sodium chicken broth fat-free
  •  garlic cloves minced
  • 12  littleneck clams 
  • cup onion coarsely chopped ( 1 medium onion)
  • 0.5 teaspoon paprika hot
  • 0.5 cup peas green frozen
  • cup plum tomatoes chopped ( 1 tomato)
  • 0.7 cup bell pepper red coarsely chopped ( 1 small bell pepper)
  • 0.3 teaspoon saffron threads crushed
  • 0.3 teaspoon salt 
  • cup short-grain rice uncooked
  • 0.5 pound shrimp deveined peeled

Directions

  1. Combine wine and saffron threads in a small bowl; let stand 15 minutes.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add chorizo; cook 3 minutes, stirring occasionally.
  4. Remove chorizo from pan.
  5. Add onion and pepper to pan; cook 5 minutes, stirring occasionally. Stir in paprika, salt, and garlic; cook 1 minute. Return chorizo to pan.
  6. Add wine mixture, rice, broth, and clam juice; bring to a boil. Cover, reduce heat, and cook 15 minutes or until most of liquid is absorbed. Stir in tomato, peas, clams, and shrimp. Cover and cook 5 minutes or until clams open; discard any unopened shells.
