  • teaspoon pepper black freshly ground
  • 12  cilantro sprigs fresh
  • 1.8 teaspoons coarse kosher salt 
  • tablespoon coriander seeds 
  • 3.8 pound cornish game hens split
  • tablespoon cumin seeds 
  •  garlic cloves peeled
  • servings olive oil 
  • 0.5 cup whole-milk yogurt plain
  • tablespoons cup heavy whipping cream sour

Directions

  1. Position rack in top third of oven; preheat to450°F. Arrange hens, skin side up, on largerimmed baking sheet. Finely grind cuminand next 3 ingredients in spice mill.
  2. Brush hens with oil.
  3. Sprinkle on bothsides with spice mixture. Roast hens untilcooked through, about 35 minutes.
  4. Meanwhile, combine all remainingingredients in processor. Blend until almostsmooth. Season sauce with salt and pepper.
  5. Place hens on plates.
  6. Serve with sauce.
