Ingredients

  • tbsp apples 
  •  thai chile pressed
  • 2.3 oz cherry tomatoes halved
  • tbsp galangal julienned
  •  kaffir lime leaves finely sliced
  • tbsp lemon grass diagonally sliced finely
  • tbsp juice of lime 
  • tbsp miso 
  • 3.3 oz oyster mushrooms sliced
  • medium shallots crushed quartered
  • 3.3 oz straw mushrooms trimmed halved

  • drinking straws

Directions

  1. In a saucepan, bring vegetable stock, shallots, galangal, lemongrass, kaffir lime leaves and chiles to a boil. Continue to boil for 4-5 minutes.
  2. Add oyster and straw mushrooms and cherry tomatoes. Once cooked remove from heat and season with miso paste, lime juice and apple concentrate.
