  • 12 ounces apricot dried chopped

  • 0.5 teaspoon ground allspice 
  • 0.3 teaspoon ground cloves 
  • teaspoon ground coriander 
  •  onion chopped
  • 0.5 teaspoon salt 
  • 1.3 cups sugar

Cook 12 oz. chopped dried apricots, 1 1/4 cups sugar, 1 tsp. ground coriander, 1/2 tsp. fennel seeds (crushed), 1/2 tsp. ground allspice, 1/4 tsp. ground cloves, 3/4 cup cider vinegar, 1 chopped onion, 1/2 cup golden raisins, 2 Tbsp. grated fresh ginger, 1/2 tsp. salt, 1/4 tsp. cayenne pepper and 3/4 cup water over low heat, stirring until sugar dissolves. Simmer until mixture thickens, stirring occasionally, about 40 minutes.
