Ingredients

  • teaspoon apple pie spice 
  • medium apples cut into thin slices
  • pinch ground pepper generous
  • 0.3 cup apple cider vinegar 
  • tablespoon dijon mustard 
  • 0.5 cup honey 
  • 0.3 cup olive oil extra virgin extra-virgin
  • cup pecans 
  • cups baby spinach assorted (such as baby spinach or arugula)
  • pinch salt

Directions

  1. Heat oven to 375°F and arrange a rack in the middle.
