Ingredients

  • small carrots chopped
  •  celery stalk chopped
  • 14 oz chicken broth canned
  • 0.3 cup cilantro leaves chopped
  • 0.3 cup apricots dried chopped
  • tsp ground ginger 
  • cups rice white instant uncooked
  • Tbsp oil 
  • small onion chopped
  • 0.3 cup planters cocktail peanuts 
  • lb pork tenderloin cubed
  • medium tomatoes chopped

Equipment

Directions

  1. Cook and stir carrot, celery and onion in hot oil in large skillet until tender.
  2. Add pork and ginger; cook and stir until pork is browned.
  3. Add chicken broth and 1/2 cup water; bring to boil.
  4. Add rice, tomato and apricots.
  5. Remove from heat. Cover and let stand 5 min.
  6. Sprinkle with peanuts and cilantro just before serving.
