  • 0.3 cup apple cider 
  • 0.3 teaspoon pepper black freshly ground
  • tablespoons butter 
  • teaspoon thyme leaves fresh
  • cups gala apple unpeeled thinly sliced
  • 0.1 teaspoon ground cinnamon 
  • 0.3 teaspoon ground coriander 
  • 0.1 teaspoon ground nutmeg 
  • pound pork tenderloin trimmed
  • 0.1 teaspoon salt 
  • 0.4 teaspoon salt 
  • 0.3 cup shallots thinly sliced

Directions

  1. Heat a large cast-iron skillet over medium-high heat.
  2. Combine first 5 ingredients; sprinkle spice mixture evenly over pork. Coat pan with cooking spray.
  3. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness.
  4. Remove pork from pan; keep warm.
  5. Melt butter in pan; swirl to coat.
  6. Add apple slices, 1/3 cup shallots, and 1/8 teaspoon salt; saut 4 minutes or until apple starts to brown.
  7. Add apple cider to pan, and cook for 2 minutes or until apple is crisp-tender. Stir in thyme leaves.
