Ingredients

  • 15 ounce black beans rinsed drained canned
  • 15 ounce kidney beans rinsed drained canned
  • 15 ounce pinto beans rinsed drained canned
  • 28 ounce canned tomatoes crushed canned
  • 25 servings toppings: cilantro fresh shredded chopped reduced-fat
  • pound extra-lean ground beef 
  • 14.5 ounce chicken broth fat-free reduced-sodium canned
  •  garlic cloves minced
  • ounce chiles diced green canned
  • teaspoons hot sauce 
  • tablespoons juice of lime fresh
  •  onions chopped
  • 0.5 teaspoon pepper 
  • pound pork loin chops boneless cut into bite-size pieces
  • 0.3 teaspoon salt 
  • 1.1 ounce fajita seasoning

  • dutch oven

Directions

  1. Cook first 4 ingredients in a Dutch oven coated with cooking spray until beef crumbles and is no longer pink.
  2. Drain; return to Dutch oven.
  3. Add onions and garlic to Dutch oven, and cook 5 to 7 minutes or until onions are tender.
  4. Stir in black beans and next 8 ingredients. Bring to a boil; reduce heat, and simmer 30 to 40 minutes or until pork is tender.
  5. Serve with desired toppings.
  6. Note: For testing purposes only, we used McCormick Fajita Seasoning
  7. Mix.
