Ingredients

  • 250 cherry tomatoes sliced quartered
  • tbsp jalapeno finely chopped
  • small handful cilantro leaves roughly chopped
  •  juice of lime 
  • small onion red finely chopped
  • tbsp olive oil extra virgin extra-virgin
  •  chicken breast strips/pre-cooked/chopped cooked
  •  little gem lettuces 
  •  bell pepper red deseeded sliced
  •  mangos diced ripe peeled
  • handful tortilla chips

Directions

  1. Put the cherry tomatoes, jalapeos, coriander, lime juice, onion and oil in a large bowl with some seasoning.
  2. Pop the remaining ingredients, except the tortilla chips, on top of the dressing. Gently mix the salad together to coat.
  3. Sprinkle the tortilla chips over the top and serve immediately with lime halves.
