Ingredients

  • tablespoons cilantro leaves chopped
  • ounces roasted chicken divided cooked chopped
  • 8-inch flour tortilla ()
  • 0.3 cup spring onion thinly sliced ( 2)
  • tablespoon jalapeno chopped
  • ounces cheddar cheese shredded divided reduced-fat
  • 0.8 cup salsa

Directions

  1. Combine first 3 ingredients in a small bowl; stir until blended.
  2. Place 1/4 cup chopped chicken over half of 1 tortilla.
  3. Sprinkle with 3 tablespoons cheese and 1 tablespoon onion mixture; fold in half. Repeat procedure with the remaining tortillas, chicken, cheese, and onion mixture.
  4. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  5. Place 2 quesadillas in pan. Cook 2 minutes on each side or until lightly browned. Repeat procedure with remaining quesadillas.
  6. Cut each quesadilla in half.
  7. Serve with salsa.
