  • 3.5 cups less-sodium chicken broth fat-free
  • tablespoon fish sauce 
  • tablespoons basil fresh thinly sliced
  • 0.5 teaspoon ginger fresh grated peeled
  • 0.3 cup green onions thinly sliced
  • tablespoon brown sugar light
  • cup coconut milk light
  • tablespoons juice of lime fresh
  • cup mushrooms sliced
  • 0.3 cup bell pepper red finely chopped
  • 0.3 teaspoon curry paste red
  • pound shrimp deveined peeled

Directions

  1. Combine first 7 ingredients in a large saucepan over medium-high heat; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Stir in coconut milk; cook 2 minutes or until hot.
  2. Add shrimp to pan; cook 3 minutes or until shrimp are done.
  3. Remove pan from heat; stir in onions, basil, and juice.
