Ingredients

  • 0.5 pound andouille sausage diced
  • 16 ounce bread loaf french italian
  • 1.5 teaspoons cajun spice 
  • pound crawfish tails frozen thawed cooked drained
  •  garlic cloves minced
  • small bell pepper green chopped
  • small onion chopped
  • 14 ounce pasta sauce 
  • 12 ounces provolone cheese shredded

Equipment

  • baking sheet
  • oven

Directions

  1. Place a 12-inch skillet over medium heat.
  2. Add sausage; cook 4 to 5 minutes or until lightly browned on all sides.
  3. Add onion, bell pepper, and garlic; cook over medium-high heat 5 to 7 minutes or until vegetables are tender.
  4. Add crawfish tails and Cajun seasoning.
  5. Remove from heat.
  6. Cut bread in half lengthwise.
  7. Cut each half crosswise into 3 equal pieces.
  8. Place bread, cut side up, on a baking sheet.
  9. Spread sauce over bread halves; top evenly with crawfish mixture.
  10. Sprinkle with cheese.
  11. Bake at 425 for 13 minutes or until cheese melts.
  12. Serve immediately.
