Ingredients

  • teaspoon chile paste with garlic (such as sambal oelek)
  • teaspoon sesame oil dark
  • cup edamame green frozen shelled ( soybeans)
  • cup cucumber diced english
  • 1.3 cups bean sprouts fresh
  • 0.3 cup green onions thinly sliced
  • 0.3 cup mayonnaise reduced-fat
  • teaspoon soya sauce low-sodium
  • tablespoon rice vinegar 
  • ounces soba uncooked (buckwheat noodles)
  • teaspoons miso white (soybean paste)

Directions

  1. Cook soba in boiling water 2 minutes; add edamame. Bring to a boil; cook 2 minutes.
  2. Drain; rinse with cold water.
  3. Drain; cool.
  4. Place soba mixture in a bowl.
  5. Add cucumber and onions.
  6. Combine mayonnaise and next 5 ingredients (through oil); stir with a whisk.
  7. Pour over the soba mixture; toss well. Top with bean sprouts.
