Ingredients
- 1 teaspoon chile paste with garlic (such as sambal oelek)
- 1 teaspoon sesame oil dark
- 1 cup edamame green frozen shelled ( soybeans)
- 1 cup cucumber diced english
- 1.3 cups bean sprouts fresh
- 0.3 cup green onions thinly sliced
- 0.3 cup mayonnaise reduced-fat
- 1 teaspoon soya sauce low-sodium
- 1 tablespoon rice vinegar
- 8 ounces soba uncooked (buckwheat noodles)
- 2 teaspoons miso white (soybean paste)

- Cook soba in boiling water 2 minutes; add edamame. Bring to a boil; cook 2 minutes.
- Drain; rinse with cold water.
- Drain; cool.
- Place soba mixture in a bowl.
- Add cucumber and onions.
- Combine mayonnaise and next 5 ingredients (through oil); stir with a whisk.
- Pour over the soba mixture; toss well. Top with bean sprouts.
