Ingredients

  • tbsp olive oil 
  •  garlic cloves crushed
  • tsp ground cumin 
  • 0.5 tsp paprika 
  • 200 tomatoes chopped canned
  •  bell pepper red deseeded cut into chunks
  • 450 fish fillets white cut into chunks
  • handful coriander roughly chopped
  •  optional: lemon cut into wedges

Directions

  1. Heat oil in a saucepan. Tip in the garlic, cumin and paprika and cook for 1 min.
  2. Add 100ml water and the tomatoes. Bring to the boil, then turn down the heat.
  3. Add the pepper, simmer for 5 mins.
  4. Add the fish, simmer for 5 mins.
  5. Serve with coriander and a wedge of lemon.
