Ingredients

  • 0.5 cup avocado chopped
  • cloves garlic chopped
  • large bell pepper green cored seeded coarsely chopped
  •  jalapeño seeded chopped
  • tablespoons olive oil 
  • small onion chopped
  • 0.3 cup red wine vinegar 
  • 16 servings salt and pepper 
  • Tbsp scallions light white green sliced
  • cups sacremento tomato juice chilled
  • lb tomatoes cored seeded quartered
  • 1.5 oz bread white

Directions

  1. Combine tomatoes, bell pepper, jalapeo, onion, garlic and bread in a blender.
  2. Add 1 cup juice and pulse until chunky.
  3. Whisk in vinegar and oil and season with salt and pepper. Thin with additional juice, 2 Tbsp. at a time, until mixture reaches desired consistency. Cover and chill at least 2 hours or overnight.
  4. Check seasoning, adjust if desired, and serve cold, topped with scallions and avocado, if using.
