  • teaspoon cornstarch 
  • 0.3 cup cilantro leaves fresh chopped
  • tablespoon curry paste green
  • cup coconut milk light
  • tablespoons juice of lime fresh ( 1 lime)
  • servings lime wedges 
  • 0.3 teaspoon salt 
  • 1.5 pounds shrimp deveined peeled
  • tablespoons sugar

Directions

  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Add shrimp; cook 3 minutes, stirring occasionally.
  3. While shrimp cook, combine coconut milk and next 5 ingredients, stirring with a whisk until smooth.
  4. Add to shrimp in pan; bring to a boil. Reduce heat; simmer 5 minutes or until slightly thickened.
  5. Sprinkle with cilantro; serve with lime wedges.
