Ingredients

  • 0.3 cup mint leaves fresh chopped
  •  garlic cloves 
  • 0.3 teaspoon ground coriander 
  • 1.5 teaspoons ground cumin divided
  • 0.8 teaspoon kosher salt divided
  • pound pork tenderloin trimmed
  • tablespoons juice of lemon divided
  • tablespoons olive oil divided
  • cup greek yogurt plain 2% reduced-fat
  • 0.3 cup bottled roasted bell pepper red
  • tablespoon sambal oelek fresh (ground chile paste)

Directions

  1. Place bell pepper, 2 tablespoons olive oil, 2 tablespoons juice, sambal oelek, 1/4 teaspoon salt, 1/2 teaspoon cumin, coriander, and garlic in a food processor; process until smooth.
  2. Place harissa in a large bowl.
  3. Preheat oven to 42
  4. Combine yogurt, mint, 1 tablespoon juice, and 1 teaspoon cumin.
  5. Heat a large skillet over medium-high heat.
  6. Add 1 tablespoon olive oil; swirl to coat.
  7. Sprinkle pork with 1/2 teaspoon salt.
  8. Add pork to pan; cook 6 minutes, browning on all sides.
  9. Add pork to harissa, turning to coat.
  10. Place pork on a rack in a pan; brush with remaining harissa.
  11. Bake at 425 for 11 minutes or until a thermometer registers 14
  12. Remove from oven; let stand 5 minutes; cut crosswise into 12 slices.
  13. Serve with yogurt sauce.
