Ingredients

  • 16  boston lettuce leaves 
  • 0.3 cup carrots diced
  • 1.5 cups cucumber diced seeded
  • 0.3 cup dry-roasted peanuts salted chopped
  • tablespoon fish sauce 
  • 0.3 cup cilantro leaves fresh chopped
  • tablespoon ginger fresh grated peeled
  •  garlic cloves minced
  • 12 ounces ground pork lean
  • tablespoons juice of lime fresh
  • cup bell pepper diced red
  • 0.5  serrano chile thinly sliced
  • teaspoon sugar

Directions

  1. Combine first 3 ingredients in a medium bowl, mixing gently until just combined; let stand at room temperature 15 minutes.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add pork mixture to pan; saut 5 minutes or until pork is browned, stirring to crumble.
  4. Place pork mixture in a large bowl.
  5. Add cucumber and next 5 ingredients (through serrano), and stir to combine.
  6. Combine lime juice, fish sauce, and sugar in a small bowl, stirring until sugar dissolves.
  7. Add juice mixture to pork mixture; toss.
  8. Place about 1/3 cup pork mixture in each lettuce leaf.
