  • 0.8 teaspoon ground chipotle pepper dried
  • teaspoon ground cumin 
  • pound pork tenderloin trimmed
  • teaspoons olive oil 
  • 0.3 teaspoon salt 
  • servings black bean and tomatillo salsa

Directions

  1. Combine first 3 ingredients; rub over all sides of pork.
  2. Let stand 15 minutes.
  3. Heat a large nonstick skillet over medium-high heat; add oil.
  4. Add pork and cook 3 minutes; turn and cook 2 to 3 minutes on other side or until browned.
  5. Preheat oven to 35
  6. Wrap handle of pan with foil.
  7. Bake at 350 for 22 minutes or until a thermometer registers 160 (slightly pink).
  8. Remove from oven, tent with foil and let stand 5 minutes.
