Ingredients

  •  baguette cut into 24 diagonal slices
  • tablespoon capers chopped
  • 0.3 teaspoon cayenne pepper 
  • tablespoon chives chopped
  • 0.3 cup pickled cucumbers / gherkins chopped
  • tablespoon juice of lemon 
  • 0.3 cup mayonnaise reduced-fat
  • tablespoons olive oil 
  • 0.5 teaspoon paprika 
  •  scallions thinly sliced
  • ounces shrimp cooked roughly chopped
  • tablespoon tomato paste

Directions

  1. Preheat oven to 375F.
  2. Brush baguette slices on both sides with olive oil and place on a rimmed baking sheet.
  3. Bake for 10 minutes, turning over halfway through.
  4. Let cool.
  5. In a large bowl, combine mayonnaise, scallions, gherkins, capers, tomato paste, lemon juice, paprika, cayenne and shrimp; stir well. Mound mixture onto baguette slices; sprinkle with chives.
