Ingredients

  • teaspoons bottled garlic minced
  • 1.5 cups broccoli stir-fry frozen (such as Birds Eye)
  • 17.6 ounce microwaveable brown rice whole cooked (such as Uncle Ben's Grain Brown Ready Rice)
  • 0.3 teaspoon pepper red crushed
  • teaspoons sesame oil dark
  • cup edamame green frozen shelled ( soybeans)
  • 0.5 cup egg substitute 
  • 2.5 tablespoons soya sauce low-sodium

Equipment

Directions

  1. Combine broccoli stir-fry and edamame in a microwave-safe bowl. Microwave at HIGH 2 minutes or until thawed; set aside.
  2. While vegetables thaw, heat a large nonstick skillet over medium-high heat; coat pan with cooking spray.
  3. Add egg substitute; cook 2 minutes, stirring frequently, until scrambled.
  4. Remove from pan. Wipe pan with paper towels.
  5. Heat sesame oil in pan over medium-high heat; add garlic and crushed red pepper. Cook 1 minute or until fragrant. Stir in vegetables and rice; cook 2 minutes or until thoroughly heated. Stir in soy sauce and reserved egg.
  6. Garnish with sesame seeds and onions, if desired.
