Ingredients

  • 1.3 cups juice of lime fresh
  •  mint leaves 
  • cups peaches ( 3 medium)
  • 0.8 cup rum 
  • 1.3 cups sugar 
  • cups water 

Equipment

  • blender
  • baking pan

Directions

  1. Combine first 4 ingredients in a medium saucepan; bring to a boil. Reduce heat; simmer for 5 minutes. Cool, and discard mint.
  2. Place half of peach mixture in a blender; process until smooth.
  3. Pour pureed peach mixture into a 13 x 9inch baking dish.
  4. Combine remaining peach mixture, juice, and rum in blender; process until smooth.
  5. Add to baking dish.
  6. Freeze 8 hours or until firm.
  7. Remove mixture from freezer; scrape entire mixture with a fork until fluffy.
  8. Serve immediately.
  9. Garnish with peach slices and mint sprigs, if desired.
