Ingredients

  • slices bacon cut into 1/2-inch pieces
  • tablespoons apple cider vinegar white
  • 0.3 cup spring onion chopped
  •  hardboiled eggs sliced
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • cups pkt spinach fresh
  • teaspoons sugar 
  • tablespoons vegetable oil

  • slotted spoon

Directions

  1. In 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp.
  2. Remove bacon with slotted spoon; drain on paper towels.
  3. Drain all but 3 tablespoons bacon drippings from skillet (if fewer than 3 tablespoons remain, add enough vegetable oil to drippings to equal 3 tablespoons).
  4. Add oil, onions, sugar, salt and pepper to drippings in skillet. Cook over medium heat 2 to 3 minutes, stirring occasionally, until onions are slightly softened. Stir in vinegar.
  5. Place spinach in very large bowl.
  6. Pour warm dressing over spinach; toss to coat. Arrange egg slices on top. Crumble bacon and sprinkle on top.
  7. Serve immediately.
