Ingredients

  • slices apple-smoked bacon 
  • 10 ounce baby spinach fresh
  • 0.3 cup balsamic vinegar 
  • head belgian endive cut into 8 slices lengthwise*
  • teaspoons dijon mustard 
  • teaspoons parsley fresh chopped
  • 0.5 teaspoon pepper freshly ground
  • 0.3 medium size onion red thinly sliced
  • 0.5 teaspoon salt

Directions

  1. Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 1/4 cup drippings in skillet. Crumble bacon, and set aside.
  2. Combine vinegar, mustard, and, if desired, 1/2 cup crumbled blue cheese, stirring until mixture is smooth.
  3. Add vinegar mixture and onion to hot bacon drippings in skillet over medium heat, stirring to coat.
  4. Add bacon, parsley, salt, and pepper.
  5. Add spinach and endive; toss in skillet just until combined.
  6. Serve immediately. Top with additional crumbled blue cheese, if desired.
  7. *1/2 (10-ounce) package fresh baby spinach may be substituted.
