  • 0.3 teaspoon ground pepper black
  • 0.5 cup milk 
  • tablespoons olive oil 
  • 0.5 cup onion chopped
  • 0.5 cup bell pepper red cut into thin matchsticks
  • 0.5 teaspoon salt 
  • 0.5 cup mozzarella cheese shredded
  • 10 ounce pkt spinach frozen dry thawed chopped

Directions

  1. Heat olive oil in a skillet over medium heat. Cook and stir red pepper and onion in hot oil until tender, about 5 minutes.
  2. Beat eggs and milk together in a bowl until smooth; add spinach, ham, mozzarella cheese, feta cheese, salt, and black pepper. Gently stir to mix evenly; pour into the skillet.
  3. Place a cover on the skillet and cook until the egg mixture is completely set in the center, 7 to 10 minutes.
  4. Cut into wedges to serve.
