Ingredients

  • cups baby spinach leaves 
  • cup bell pepper strips red
  • tablespoons brown sugar 
  • 0.5 teaspoon garlic powder 
  • pound pork tenderloin trimmed
  • cups napa cabbage thinly sliced
  • 0.3 teaspoon salt 
  • tablespoon sriracha such as huy fong) hot
  • 0.3 cup sesame ginger dressing low-fat (such as Newman's Own)

Directions

  1. Cut pork crosswise into 1/2-inch slices; flatten each slice slightly with hand.
  2. Combine pork and Sriracha in a bowl, tossing to coat.
  3. Add sugar, garlic powder, and salt; toss well.
  4. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  5. Add pork mixture to pan, and cook 3 minutes on each side or until done.
  6. Remove from heat; keep warm.
  7. Combine spinach, cabbage, and bell pepper in a large bowl.
  8. Add sesame ginger dressing; toss well. Arrange 1 1/2 cups spinach mixture in each of 4 shallow bowls; top each serving with 3 ounces pork.
