Ingredients

  •  bay leaf 
  •  carrots finely chopped
  • large stalks celery finely chopped
  • 0.5 teaspoon thyme leaves dried
  • pound peas dried green picked over rinsed
  • cups chicken broth low-sodium
  • tablespoons olive oil 
  •  onion finely chopped
  • servings salt and pepper

Directions

  2. Add onion, carrots and celery and cook, covered, for 10 minutes, stirring occasionally.
  3. Stir in remaining ingredients and bring to boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until peas are soft, about 45 to 50 minutes.
  4. Puree soup in a blender in small batches.
  5. Serve hot.
