  • ounces ham cooked cut into 1/4-inch dice
  • tablespoons dairy-free margarine cut into 4 to 6 pieces
  • 0.3 cup mint leaves fresh coarsely chopped for garnish
  • cups peas fresh
  • tablespoons tarragon fresh coarsely chopped for garnish
  • servings salt and pepper to taste

Directions

  1. Bring a medium-sized saucepan of salted water to a boil over high heat.

  3. Drain the peas, reserving 2 tablespoons cooking water. Return the peas and reserved cooking water to saucepan.
  4. Add the ham, margarine or oil, mint, and tarragon, stirring until everything is combined.Season with salt and pepper to taste.
  5. Transfer the peas with ham to a serving bowl, and garnish with mint and tarragon sprigs to serve, if desired.
