Ingredients

  • 0.3 pound bibb lettuce leaves 
  • 0.3 teaspoon pepper black freshly ground
  • 2.5 cups carrots ()
  • cups peas green english shelled ( 2 pounds unshelled peas)
  • 0.5 teaspoon sea salt 
  • 0.5 cup shallots sliced
  • 0.5 cup spring onion trimmed peeled sliced
  • tablespoons butter unsalted divided
  • 0.5 cup water

Directions

  1. Melt 1 tablespoon butter in a large saucepan over medium heat.
  2. Add carrot, sliced onion, shallots, sea salt, and ground black pepper, stirring to combine. Cover and cook 7 minutes, stirring occasionally.
  3. Add water and peas; place lettuce leaves on top of mixture. Cover and cook 5 minutes or until peas are tender.
  4. Remove from heat; gently stir in 1 tablespoon butter.
