Ingredients
- 0.5 cup cucumber diced seeded
- 1.5 teaspoons curry powder
- 0.5 teaspoon mustard dry
- 2 tablespoons cilantro leaves fresh chopped
- 0.5 teaspoon garlic powder
- 0.3 cup green onions chopped
- 2 tablespoons juice of lemon
- 2 cups lentil sprouts
- 1 tablespoon olive oil
- 1.5 teaspoons oregano dried
- 1 pinch salt and pepper to taste
- 0.5 cup tomatoes seeded chopped
- 1 tablespoon citrus champagne vinegar

Directions
- In a medium bowl, combine the lentil sprouts, cucumber, tomato, green onions, cilantro and radishes. Toss lightly.
- In a smaller bowl, whisk together the olive oil, lemon juice, white wine vinegar, oregano, garlic powder, curry powder, mustard, salt and pepper.
- Drizzle the dressing over the salad, and toss lightly to coat. Chill for 20 to 30 minutes to allow the flavors to blend before serving.
