Ingredients

  • teaspoon pepper black divided
  • ounce cheese blue crumbled
  •  cucumber english peeled halved lengthwise cut into 1/4-inch-thick slices
  • pound flank steak trimmed
  • ounce prewashed mâche ( 8 cups)
  • teaspoons olive oil extra-virgin divided
  • 1.5 cups radishes thinly sliced
  • tablespoons red wine vinegar divided
  • 0.6 teaspoon salt divided

Equipment

Directions

  1. Heat a grill pan over medium-high heat.
  2. Combine 1 tablespoon vinegar, 1 teaspoon oil, 1/2 teaspoon pepper, and 3/8 teaspoon salt; rub evenly over surface of steak. Coat grill pan with cooking spray.
  3. Add steak to pan, and cook for 5 minutes on each side or until desired degree of doneness.
  4. Remove steak from pan, and let stand 5 minutes.
  5. Cut the steak diagonally across the grain into thin slices.
  6. While steak cooks, combine remaining 2 tablespoons red wine vinegar, remaining 1 teaspoon oil, remaining 1/2 teaspoon pepper, remaining 1/4 teaspoon salt, radishes, and cucumber in a large bowl, and toss well to coat.
  7. Add mche; toss gently to combine.
  8. Serve the steak with salad.
  9. Sprinkle evenly with cheese.
