  • cups baby spinach 
  • 0.8 teaspoon pepper black divided freshly ground
  • teaspoon dijon mustard 
  • pound flank steak trimmed
  • 0.5 cup flat-leaf parsley leaves fresh
  • 0.5 cup cilantro leaves fresh
  •  garlic cloves divided
  • teaspoons juice of lemon fresh divided
  • 0.5 teaspoon lemon rind 
  • tablespoons olive oil extra-virgin divided
  • 0.5 cup onion red vertically sliced
  • 0.6 teaspoon salt divided

Directions

  1. Combine parsley, cilantro, 2 tablespoons oil, lemon rind, 1 tablespoon lemon juice, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 4 garlic cloves in a mini food processor; process until finely chopped.
  2. Heat a grill pan over medium-high heat. Coat pan with cooking spray.
  3. Sprinkle steak with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Add steak to pan; cook 5 minutes on each side or until desired degree of doneness.
  5. Let steak stand 5 minutes. Thinly slice steak across the grain.
