Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • tablespoon canola oil 
  • 0.3 cup wine dry white
  • tablespoon fish sauce 
  •  garlic clove chopped
  • pounds littleneck clams scrubbed
  • teaspoons oyster sauce 
  • teaspoons serrano chiles minced
  • teaspoon sugar 
  • cup thai basil fresh chopped

  • slotted spoon

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add garlic; saut for 1 minute or until golden.
  3. Add chile; saut 10 seconds. Stir in wine and next 4 ingredients (through pepper). Bring to a boil.
  4. Add clams; cover and cook 7 minutes or until shells open.
  5. Add basil; cover and cook for 1 minute. Discard any unopened shells.
  6. Remove clams from pan with a slotted spoon.
  7. Serve with sauce.
