- 4 pounds mussels scrubbed
- 1 teaspoon olive oil
- 1 cup onion chopped
- 0.3 teaspoon saffron threads crushed
- 3 tablespoons tomato paste
- 1.5 tablespoons whipping cream

- Heat oil in a large saucepan over medium-high heat.
- Add onion to pan; saut 1 minute.
- Add garlic; saut 30 seconds.
- Add saffron; saut 15 seconds. Stir in tomato paste, whipping cream, and clam juice; bring to a boil. Cook for 1 minute, stirring occasionally.
