  • 0.3 cup wine dry white
  • tablespoons flat parsley chopped
  • 4.5 pounds mussels scrubbed
  • large shallots finely chopped
  • 3.5 tablespoons butter unsalted cut into 1/2" cubes
  • tablespoon citrus champagne vinegar

Directions

  1. Place shallot, onion, wine, butter, andvinegar in a large heavy pot.
  2. Add mussels,cover, and bring to a boil. Cook, gentlyshaking pot once or twice, until musselsopen, 3-5 minutes (discard any musselsthat don't open).
  3. Set a strainer lined with a double layerof cheesecloth over a bowl; set aside. Usinga slotted spoon, transfer mussels to a largebowl.
  4. Pour mixture in pot through preparedstrainer. Season broth with pepperand pour over mussels.
  5. Sprinkle with parsley.
