Ingredients

  • cups broccoli florets 
  • tablespoons fish sauce 
  • pound flank steak cut into thin strips
  • tablespoon ginger fresh finely chopped
  • cloves garlic chopped
  • cups chicken broth low-sodium
  • tablespoons curry paste green red
  • ounces pad thai rice noodles 
  • servings salt and pepper 
  • tablespoons vegetable oil

Directions

  1. Bring a pot of salted water to a boil.
  2. Add broccoli and rice noodles; cook until just tender, about 4 minutes.
  3. Drain; rinse under cold water. In a medium bowl, whisk together broth, curry paste and fish sauce.
  4. In a large skillet, warm oil over high heat. Season beef with salt and pepper; add to skillet in a single layer. Cook, stirring, until no longer pink, about 4 minutes.
  5. Transfer to a bowl.
  6. Add ginger and garlic to skillet; saut 30 seconds.
  7. Add broth mixture, beef, noodles and broccoli to skillet and saut until sauce thickens and ingredients are heated through.
