Ingredients

  • tablespoon cornstarch 
  •  garlic cloves crushed
  • teaspoon ginger root grated
  • large green onions cut in 1-inch pieces
  • tablespoons mirin sweetened ( Asian wine)
  • tablespoons oil 
  • cups pepper strips fresh
  • 20 ounce pineapple in juice chunk canned
  • pound chicken breast boneless skinless cut in 1-inch pieces
  • 0.3 cup soya sauce reduced-salt
  • tablespoons citrus champagne vinegar

Directions

  1. Combine first six ingredients; stir well.
  2. Heat oil in a large skillet and stir-fry chicken until brown and done, about 5 minutes.
  3. Remove.
  4. Add green onions, peppers and pineapple to the skillet; heat through.
  5. Pour in sauce and stir until thickened. Return chicken to skillet; heat through.
  6. Serve with brown rice; top with optional almonds.
