  • tablespoon mint leaves fresh minced
  • tablespoons honey 
  • 0.3 teaspoon lemon rind grated
  • servings garnish: mint sprig fresh
  • servings strawberries fresh whole
  • quart vanilla yogurt

Directions

  1. Line a fine wire-mesh strainer with a coffee filter, and place over a bowl.
  2. Spoon yogurt into filter. Cover with plastic wrap, and chill at least 24 hours. Yogurt may be chilled up to 72 hours. It gets thicker the longer it chills.
  3. Discard liquid in bowl, and whisk together thickened yogurt, mint, lemon rind, and honey until blended.
  4. Garnish, if desired.
  5. Serve with strawberries.
