Ingredients

  • 0.3 teaspoon double-acting baking powder 
  • teaspoon baking soda 
  • 1.8 cups cake flour 
  • tablespoons cornstarch 
  • tablespoons juice of lemon 
  • 0.5 teaspoon salt 
  • 0.3 cup vanilla-flavored soy yogurt (see note)
  • 0.5 cup vanilla 
  • pound strawberries stemmed sliced
  • 0.5 cup sugar 
  • 0.5 teaspoon vanilla extract 
  • 0.3 cup water

Directions

  1. Mix together flour, sugar, baking soda, baking powder, and salt.
  2. Add soy yogurt, vanilla, water, soymilk, and lemon juice.
  3. Mix until just blended–do not overmix.
  4. Pour into oiled 8×8-inch pan and bake at 350 F until a toothpick comes out clean, about 30 minutes.
  5. Remove and allow to cool completely.
  6. Combine the strawberries, cornstarch, sugar, and water in a saucepan. Cook over medium-high heat until sauce boils and thickens.
  7. Spread over top of cake. May be served warm or chilled.
