Ingredients

  • 0.3 lb bacon sliced
  • 0.8 lb cherry tomatoes halved (1 pint)
  • tablespoons apple cider vinegar to taste
  •  ears corn 
  • 0.3 cup basil fresh chopped
  • 10 oz baby lima beans frozen thawed
  •  garlic clove minced
  • large jalapeno fresh seeded finely chopped
  • 0.5 lb okra cut into 1/3-inch-thick slices
  • small onion chopped

Directions

  1. Cook bacon in a large skillet over moderate heat until crisp.
  2. Drain on paper towels, leaving fat in skillet.
  3. Add onion to skillet and cook over moderate heat, stirring, until softened.
  4. Add garlic and cook, stirring, 1 minute. Stir in corn, jalapeño, lima beans, okra, and tomatoes and cook, stirring, until vegetables are tender, about 7 minutes. Stir in vinegar, basil, and salt and pepper to taste.
  5. Serve succotash with bacon crumbled over.
