  •  cantaloupe peeled seeded cut into medium dice
  • tablespoon pepper for garnish
  • 0.3 cup olive oil extra virgin 
  •  figs black trimmed quartered
  •  cavaillon melon or peeled seeded cut into medium dice
  • 0.5 pound pancetta julienned
  • ounce pecorino shaved for garnish
  • 0.3 pound arugula
